- 12 rice paper wrappers

- 1 carrot, julienned

- 1 cucumber, julienned

- 1 bell pepper, thinly sliced

- 1 avocado, sliced

- 100g vermicelli noodles, cooked

- Fresh mint leaves

- Fresh cilantro leaves

- Cooked shrimp or tofu (optional)

- Hoisin sauce and peanut dipping sauce


1. Prepare all your vegetables and ingredients, ensuring they are thinly sliced and ready to go.

2. Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for a few seconds until it softens.

3. Place the softened rice paper wrapper onto a clean surface, such as a cutting board.

4. Arrange a small handful of vermicelli noodles in the center of the wrapper, leaving space on either side.

5. Add a few slices of carrot, cucumber, bell pepper, avocado, and your choice of protein (if using) on top of the noodles.

- 2 onions, halved

- 1 piece of ginger, sliced

- 4 cloves of garlic, crushed

- 2 cinnamon sticks

- 4 star anise

- 4 cloves

- 1 tablespoon coriander seeds

- 2 cardamom pods

- 4 cups beef or chicken broth

- 4 cups water

- 2 tablespoons fish sauce

- 1 tablespoon sugar

Ingredients for the pho bowl:

- 200g rice noodles, cooked

- Cooked beef or chicken slices

- Bean sprouts

- Fresh herbs (Thai basil, cilantro, mint)

- Thinly sliced onions

- Lime wedges

- Sriracha sauce and hoisin sauce for serving


1. In a large pot, dry roast the onions and ginger until charred.

2. Add the crushed garlic, cinnamon sticks, star anise, cloves, coriander seeds, and cardamom pods to the pot. Toast the spices until fragrant.

3. Pour in the beef or chicken broth and water. Bring the broth to a boil, then reduce the heat and simmer for at least 1 hour.

4. Strain the broth through a fine-mesh sieve, discarding the solids. Return the broth to the pot and season with fish sauce and sugar.

5. Prepare the rice noodles according to the package instructions.

6. To assemble the pho bowls, divide the cooked noodles among serving bowls. Top with cooked beef or chicken slices, bean sprouts, sliced onions, and fresh herbs.

Green mango🥭 & prawnSalad 🦐

This vibrant and refreshing salad combines the tangy flavor of green mangoes with juicy prawns and a zesty dressing. It's the perfect accompaniment to your Vietnamese feast. Here's how to make it:

Ingredients for the salad:

- 2 green mangoes, julienned

- 200g cooked prawns, peeled and deveined

- 1 carrot, julienned

- 1 cucumber, julienned

- 1/2 red onion, thinly sliced

- Handful of fresh mint leaves

- Handful of fresh cilantro leaves

- Handful of roasted peanuts, crushed

Ingredients for the dressing:

- 2 tablespoons fish sauce

- 2 tablespoons lime juice

- 1 tablespoon sugar

- 1 garlic clove, minced

- 1 red chili, thinly sliced


1. In a large bowl, combine the julienned green mangoes, carrot, cucumber, red onion, prawns, mint leaves, and cilantro leaves.

2. In a separate small bowl, whisk together the fish sauce, lime juice, sugar, minced garlic, and sliced red chili to make the dressing.
